The Contribution of Up-Cycled Food Waste to a Balanced Diet of Low-Income Households

چکیده
This paper focuses on the contribution of an upcycling food organization to a balanced diet, which rescues and redistributes fresh or freshly cooked low-income households. To determine nutritional balance hampers provided by our case study organization, according Portuguese guidelines, we have weighed all items in three weighing rounds over period four months. The results suggest that upcycled foods can contribute more diet terms “Potato, Cereal Products”, “Vegetables”, “Meat, Fish, Seafood Eggs” “Fruits”, both Food Wheel compared general population. novelty this is evaluation population vulnerable situation, perishable such as cooked, traditional restaurants, cafes, bakeries, hotels, naturally (fruit vegetables aid services) up-cycled organization.
